This is your fridge - Summer Noodles Recipe

My name is Mathilda and I’m very happy to have been asked to write a guest blog post for Roo's Beach!

You might know me as the face behind the cakes at Strong Adolfo's, a cafe on the Atlantic Highway just outside of Wadebridge.
I own and manage Strong Adolfo’s with my husband John. 

My speciality is baking for the cafe, and as you can imagine it takes up a lot of my time. When I was asked to make this blog post I was also asked to share a recipe, I enjoy baking cakes but I don’t have a sweet tooth so don’t eat them much, I often crave savoury things and could probably happily live the rest of my life on cheese, butter and bread… as long as I still get my green smoothies in the morning!

So for this blog post, I thought I’d share with you a summery recipe of a noodle salad. A typical dish that I’d cook at home and that we both really like to eat after a long day in the cafe. 

This recipe came about after reading a whole food recipe blog, and on the website, I saw a noodle dish that looked amazing. I had less than half of the necessary ingredients at home, but with a glass of red wine in my hand, I ventured the fridge to see what I could find and the following recipe is what I came up with.

Also, in my family, we've got a tradition/game we often do at each other's homes where we open the fridge at say, my Mums, and we’d make up a meal with whatever is in the fridge. We call it "this is your fridge". I think it's possibly based on some Swedish tv program, but we've made our own version of it and it's pretty fun! When John and I do this it just means that we have to make the best out of what we’ve got left over in the fridge. There's always good dishes coming out of those cooking sessionSummer

Summer Noodle Salad (serves 2)
100g rice noodles 
100g mange tout 
2-3 spring onions 
1/2 chilli 
Thumb size piece of ginger 
1/2 cucumber 
1 small courgette 
3 tbsp sesame seeds 
1-2 handfuls of rocket salad 
1 handful of cashew nuts  

Dressing
2,5 tbsp tamari sauce 
1 tbsp honey 
2 tbsp raw apple cider vinegar 
1 tsp olive oil



Start by getting some water on the boil and add a pinch of sea salt. 

Boil the noodles according to the instructions on the packet.

Once done drain and rinse well in cold water to avoid them sticking together. 

Blanche 1/2 the mange tout just for a minute or two. I use the same sauce pan for noodles and mange tout. 

In a large mixing bowl make the dressing, add all ingredients and whisk. 

Grate the ginger, finely chop the chilli, chop the spring onions, finely chop rest of the mange tout and put in a large bowl.

Peel the cucumber & courgette lengthways making ribbons and add to the bowl along with the rice noodles.

Add the dressing to the bowl and stir well to coat the noodles and veg all over.

Add the rocket salad, then top with cashew nuts. 

I use a lot of ginger and chilli - maybe go a bit easier on them to make sure it's not too spicy if you prefer it that way.
